THE BREWING NOTES

Match your selected grind to a method below, or grind whole beans just before brewing.
Rinse the filter. Wet the grounds with 40 g of water and pause for 30 seconds. Pour slowly in stages to 320 g total, then let the water drain.
Use a basket suited to an 18 g dose. Distribute evenly and tamp level. Weigh the espresso as it brews, then adjust the grind and yield to your taste.
Add a fresh filter and the measured coffee to the basket. Pour the water into the reservoir and run the normal cycle. Stir the finished coffee before serving.
Suggested starting recipes. Use your brewer’s capacity and instructions, and change one variable at a time as you find your favorite cup.
