THE COMPOSER · COLOMBIA

Let the cup
set the tempo.

Red apple and stone fruit. Caramel and brown sugar. The Composer pairs fruit notes with familiar sweetness in a Colombian medium roast.

Take a first sip before adding milk or sugar. As the cup cools, return to the notes on the label and notice what stands out to you.

THE BREWING NOTES / 01

How to brew The Composer.

A simple filter-coffee starting point. Adjust for your brewer and your taste.

  1. 01

    Prepare with care.

    Use fresh, filtered water. For pour-over, rinse your paper filter and discard the rinse water. Add 20 g of ground coffee.

  2. 02

    Give it a moment.

    For pour-over, wet the grounds evenly with about 40 g of water. Let them bloom for 30 seconds.

  3. 03

    Pour, then pause.

    Pour slowly in stages until your scale reads 320 g total. Let the water draw through. For a drip machine, add the full measured water to the reservoir and run its normal brew cycle.

  4. 04

    Make it yours.

    Taste before adjusting. For your next cup, try a slightly coarser grind if it is bitter, or finer if it is sour. Change one thing at a time.

Solid 4-star coffee! It’s smooth and definitely good quality, but we still prefer their Bali and Papua New Guinea roasts over this one. Good, just not our personal favorite.
