What Is Coffee Processing?

After coffee cherries are harvested, the fruit surrounding the bean must be removed before the bean can be dried, roasted, and brewed. How that fruit is removed is what we call the processing method — and it dramatically changes the flavor of the final cup.

There are four primary methods: washed (wet), natural (dry), honey (pulped natural), and wet-hulled — the last being unique to Indonesia. Washed Process (Wet Process)

How It Works

The coffee cherry's outer skin is removed immediately after harvest using a depulping machine. Beans are fermented in water tanks for 12–72 hours — Lactobacillus and Saccharomyces bacteria enzymatically degrade the mucilage and subtly influence flavor. After fermentation, beans are washed clean and dried on raised beds.

Natural Process (Dry Process)

How It Works

The whole coffee cherry — fruit and all — is dried in the sun on raised beds or patios for 3–6 weeks. The bean ferments slowly inside the fruit as it dries, absorbing sugars and flavor compounds from the surrounding pulp. Honey Process (Pulped Natural)

How It Works

The skin is removed (like washed), but some or all of the mucilage is intentionally left on the bean during drying (like natural). Yellow Honey retains the least mucilage (closest to washed); Black Honey retains the most (closest to natural). The name refers to the sticky, golden appearance of the mucilage-coated beans as they dry — not added sweetener.

Wet-Hulled Process (Giling Basah)

How It Works

Unique to Indonesia — particularly Sumatra and Bali — wet-hulling removes the parchment layer from the bean while it still has high moisture content (35–50%), unlike other methods where the bean is fully dried before hulling. This early hulling exposes the soft, swollen bean directly to the environment during its final drying phase, producing a distinctive earthy, herbal character unlike anything else in the coffee world.

The Fermentation Science Behind Processing

Processing isn't just a mechanical step — it's a biological one. During fermentation, microorganisms break down the sugars and pectin in the coffee cherry's mucilage, producing a cascade of organic acids, esters, and alcohols that become embedded in the bean's cellular structure.   • Lactic acid fermentation (dominant in washed): Lactobacillus bacteria convert sugars into lactic acid, contributing clean brightness and mild acidity.
  • Acetic acid fermentation (present in extended naturals): Produces vinegar-like acetic acid — in controlled amounts, adds complexity and wine-like depth.
  • Yeast activity (Saccharomyces cerevisiae and wild yeasts): Produce ethanol and esters responsible for fruity, floral aromas in naturals.
  • Maillard precursors: Fermentation increases free amino acids and reducing sugars — the raw ingredients for complex caramel and chocolate notes during roasting.

Processing vs. Roast Level: What Matters More?

Both matter — but processing sets the flavor foundation, while roast level shapes the expression. A light roast on a natural Ethiopian will be explosively fruity and floral.
