Take a first sip before adding milk or sugar. Return to the tasting notes as the cup cools and notice which ones stand out to you.

How to brew The Early Bird.
A practical starting point for your first cup.

Prepare with care.
Use fresh, filtered water. For pour-over, rinse the paper filter and discard the rinse water. Add 20 g of ground coffee.

Give it a moment.
For pour-over, wet the grounds evenly with about 40 g of water and let them bloom for 30 seconds.
- 03
Pour, then pause.
Pour slowly in stages until the scale reads 320 g total. Let the water draw through. For a drip machine, add all the measured water to the reservoir and run its normal cycle.

Make it yours.
Taste before adjusting. For the next cup, try a slightly coarser grind if it is bitter, or finer if it is sour. Change one thing at a time.
