Natural processing dries the coffee in its fruit before milling. Here, that process accompanies the berry and floral character of the cup.

Rinse the filter. Wet the grounds with 40 g of water and pause for 30 seconds. Pour slowly in stages to 320 g total, then let the water drain.

Add the coffee and water, then stir gently to wet the grounds. Steep, press slowly and pour all the brewed coffee into your cup or a carafe.

Add a fresh filter and the measured coffee to the basket. Pour the water into the reservoir and run the normal cycle. Stir the finished coffee before serving.
